what I notice is that, when my keywords are up in Google, they're down on Bing and Yahoo
and vice versa

Google and Yahoo gives more importance to backlinks while Bing give more importance to content, title tag and domain structure.

I don't think it is possible. Bing may become good but not no. 1

Use same SEO you apply to Google. I don't think there is a "secret way".
